Banana Raisins Loaf
I don't know what happened to Arianne's palette lately, whatever she used to love eating, now she loathes them.. Yogurt, cheese sticks, grapes, rock melon and most recently, banana and raisins.. Yes, you read me right! Banana and Raisins! I don't know of any toddler who doesn't like these. Hmmm..
But too bad, 2 days ago I already bought a big bunch of bananas so today I used them to make loaf with.. Ha! and she actually loved it! (Oooh and I also sneaked in her second dislike, raisins! heehee..)
Ingredients
500g Bananas (I used the 'pang jeo', small fragrant bananas. Very sweet)
100g Unsalted Butter, softened 100g
2 Eggs, beatened
70-80g Raisins/Sultanas (can be substituted with Choc Buttons, Almond or Walnut)
50g Light Brown Sugar (I used very little sugar compares to most other recipes because I find the fragant bananas are already quite sweet)
220g Self-Raising Flour, sifted

Electric Mixer with Paddle attachment
Rubber Spatula
Masher or Fork
Loaf Tin or A Square Tin
Wooden Skewer
Bake
1. Preheat the oven to 180degC and butter the tin either with extra butter or using a butter spray.
2. Place softened butter and brown sugar into the whisk bowl of the mixer. Whisk in medium speed.
3. When the sugar and butter are quite well-mixed, turn speed to low and add in the beatened eggs slowly.
4. Mash the bananas.
5. Add in the mashed bananas and raisins.
6. Follow by the sifted flour, add in part by part until finish. Continue to let mix for about 2-3 minutes.
7. Remove whisk bowl from mixer base, use spatula and hand-mix a few rounds.
8. Transfer batter to buttered tin and bake for 45-50minutes or until the wooden skewer comes through clean.
9. Remove loaf from tin and let cool for 10 minutes. Cut using bread knife, serve with yogurt or a fresh cup of mint tea.

I think i would like to invest in mixer.. where did get your mixer? And, I am a first time doing these baking stuff.. Can you advice me what do you mean by "shifting" flour? And, can i use all-purpose flour to replace the Self-Raising Flour? Also, when you mean 220g of flour.. how much is the measurement if am using tsp?

Mixer: The one I used here is a Kenwood. I got it from one of those electrical giant stores like Harvey Norman. I'd love to own one of those Kitchen Aid, but not cheap!
Sifted Flour: I actually wrote 'SIFTing' not 'Shifted'. Sift means to use a sieve and to let the flour go through to sieve inorder to air the flour and to break up lumps in the flour.
All Purpose Flour: No, you can't replace Self-Raising Flour with this. But you can
220g Weight Measurement: http://southernfood.about.com/library/info/blconv.htm I used this converter.. it says 220g of dry ingredient is equals to 15.39999 tsps.

I made this last night and the cake is moist and banana-y. Like the fact that your recipe uses less butter and sugar then others.
Anyways, the cake is in the oven when i notice the condensed milk bought for this was not used. Should have added them together with the eggs? But it's still good without the milk! :)
and i have a 14month old who rejects banana and lots of other food that she used to love...she had abt inch cube of the cake and that's enough for her!

Jun, sorry I just had to laugh at myself for being such a muddle head. I actually didn't use any condensed milk at all. I wrote this recipe on my doodling notebook but I decided not to add the condensed milk. BUT! when I blogged this another day, I forgot to omit the condensed milk!! So sorry for the confusion there but I'm happy that your loaf turned out well. And yes! the loaf is supposed to be moist and soft, that's how I like my loaves to be

Hi Brenda, I also tried this today (on top of the potato omelette) and it was successful. But how can I make it less soggy? By the way, I'm just using a toaster Oven to make this and the top turn a little black before 30 min in the oven...is the oven the problem? Contemplating whether to get a proper oven....any recommendations? Thanks again for all the wonderful and relative easy receipes...!!

Soggy? You mean it wasn't thoroughly baked? I suspect it could be that the oven-toaster's baking chamber not big enough to accomodate such baking. I don't know the ability of oven-toasters well as I've not tried using that to bake before. But it's very encouraging to know that at least you tried using it (=
At my mum's, I have a small convectional oven which costs about $800(not sure now) and it does most of the things I need. I don't have much experience in buying ovens but I know the sales guys at Harvey Norman do have lots of knowledge and they're very helpful. Just tell them your budget and they can streamlined to your needs.
